Position: Sushi Chef (Senior level position)
Wages: CAD$36.60/hour
Types: Full-time, Permanent (various shifts, including evening, weekends, and holidays)
Working hours: 30 40 hours/week
Benefits: 4% of vacation pay
Job Duties:
• Plan, organize, and oversee the preparation, cooking, garnishing, and presentation of sushi and sashimi dishes
• Lead and instruct kitchen staff in sushi preparation techniques and daily kitchen operations
• Prepare all types of sushi, including nigiri, sashimi, maki, specialty rolls, and chef’s specials
• Perform and oversee full fish preparation, including cleaning, filleting, boning, slicing, and sashimi cutting
• Develop and update special sushi items and house recipes in coordination with management
• Supervise, train, and support kitchen staff to maintain consistent quality and efficiency
• Maintain high standards for portioning, seasoning, presentation, and food quality
• Demonstrate proper use of kitchen equipment and new preparation techniques
• Coordinate with suppliers and management to order, receive, and handle fresh, high-quality ingredients
• Oversee kitchen equipment needs, including arranging repairs or replacements when required
• Ensure compliance with food safety, sanitation, and health regulations
• Prepare dishes for customers with food allergies or special dietary requirements
Job Requirements:
• Completion of secondary school
• Minimum 3 years of experience in commercial food preparation
• Experience in sushi and sashimi preparation in a commercial kitchen environment is an asset
• Ability to perform full fish preparation, including cleaning, filleting, boning, and slicing, is an asset
• Skills demonstration may be required
• Cook’s trade certification is an asset
