Hotel Director of Food & Beverage – Toronto, Ontario

The Director of Food & Beverage (DF&B) provides strategic and operational leadership for all food and beverage outlets within a branded hotel in Toronto. This role is responsible for delivering exceptional culinary and service experiences, driving profitability, maintaining brand standards, and leading a high-performing, guest-focused team. The Director of Food & Beverage is a key member of the hotel’s Executive Committee and partners closely with the General Manager.
Key Responsibilities:
- Develop and execute a comprehensive Food & Beverage strategy aligned with brand standards, ownership goals, and market trends.
- Provide inspirational leadership to culinary and service teams across all outlets.
- Drive innovation in menus, concepts, and guest experiences.
- Oversee all Food & Beverage operations including restaurants, bars, lounges, in-room dining, banquets, catering, and stewarding.
- Ensure consistent delivery of luxury service standards and exceptional product quality.
- Maintain compliance with health, safety, liquor licensing, and regulatory requirements.
- Prepare, manage, and achieve departmental budgets and forecasts
- Maximize revenue through effective pricing strategies, menu engineering, and event programming
- Control food, beverage, and labor costs while maintaining deluxe service levels
- Work closely with the General Manager, Executive Chef, Sales & Marketing, and Finance teams
- Collaborate with brand partners, suppliers, and local vendors to enhance quality and innovation
- Represent the hotel within the local culinary and hospitality community
Qualifications & Experience
- Minimum 7–10 years of progressive Food & Beverage leadership experience in the hospitality industry.
- Previous experience as a Director of Food & Beverage or senior F&B leader within a branded hotel group (luxury or upper-upscale preferred).
- Proven experience managing multiple outlets in a full-service, city-based hotel.
- Strong financial acumen with demonstrated success in budgeting, forecasting, and cost controls.
- In-depth knowledge of food safety, liquor regulations, and labor standards in Ontario.
Preferred Skills:
- Experience in the Toronto luxury or upscale dining market
- Strong understanding of unionized environments (if applicable)
- Creative, trend-aware, and guest-focused with strong operational discipline
- Hands-on leader with excellent communication and interpersonal skills
