Position: Head Chef (Japanese Specialty Foods)
Wage: CAD $39.00/hour
Types: Full-time, Permanent (various shifts including evenings, weekends, and holidays)
Working hours: 30-40 hours/week
Benefits: 4% vacation pay
Job Duties:
• Plan, organize, and oversee the preparation, cooking, garnishing, and presentation of Japanese dishes
• Prepare and cook a variety of authentic Japanese cuisine, chef’s specials, and specialty Japanese dishes
• Develop and execute seasonal or special menus to attract and retain customers in collaboration with management
• Create special house sauces and develop new recipes to improve the taste and quality of dishes
• Maintain standards for proper temperature, freshness, portioning, seasoning, and presentation
• Ensure health regulations and food safety policies are followed
• Demonstrate new techniques and equipment
• Supervise and train kitchen staff
• Coordinate with suppliers and management to order and receive fresh, high-quality ingredients
• Arrange repair and purchase of equipment
• Prepare dishes for customers with food allergies
Job requirements:
• Completion of secondary school is required
• Management training and minimum 5 of experience in commercial food preparation, including two years in a supervisory capacity and experience as a sous-chef, specialist chef or chef is required.
• Proficiency in fish filleting, including cleaning, boning, and slicing, is required
• Japanese food cooking certificate is an asset.
• Skills demonstrations, including taste and plating abilities, may be required
• Language at work: English
